Delicious, buttery, low carb and high protein cookie! It’s also low carb (keto friendly!), high in protein and can be made vegan if you please.

PREP TIME 5 minutesCOOK TIME -SERVES 1DIFFICULTY Easy
- 300 ml filtered water
- 6 slices fresh ginger
- 1 tbsp Manuka honey
- 2 cm piece cinnamon bark
- 5 cm strip lemon peel
- ½ lemon, squeezed
- slice of lemon (optional)
- sprig of thyme to serve (optional)
- Place all ingredients in small pan, bring to the boil, turn off heat and steep for 5 minutes.
- Strain and pour into a cup, add a squeeze of lemon juice and sprig of thyme.
